I am back again after 4 years and after 2 more children.. Hehe! 😅 This whole idea of consistent blogging is still a challenge for me but I will try again this time. Let's hope it will continue for a longer period of time before another hiatus! Hehe..
Yesterday, my 2 older girls and me baked some of the crunchiest cornflakes cookies everrrr and it is so delish too! A friend wanted the recipe so I was trying it out and tadaaaaa..perfect results!!

The recipe is so simple that even my 5 and 3 year old girls could do it easily! Really loved to see how they worked together to place the paper liners onto the tray and then proceeded to place the rolled balls into the liners and pressing it down slightly, just like how they were told to do.

As simple as the recipe may be, the baking time is one thing to take note of though. It took me a total of 40 minutes to get really crunchy and crispy cookies coz I had rolled the dough and having a thicker centre, the cookies obviously needed a longer time of a whopping 40 minutes!
This was taken after 20 minutes of baking. Colour is still a little pale. Even though the exterior of the cookies was crunchy, I bit into a slightly chewy centre |
So for those who prefer a slightly chewy texture, you can bake the cookies for 20 minutes but crunchy cookie lovers like me will have to be patient and clock in the golden 40 minutes to get the perfect cookies!
Now on to the recipe:
Crunchy Cornflakes Cookies
Ingredients
- 200g butter
- 150g caster sugar
- 1/4 teaspoon salt
- 230g AP flour
- 20g milk powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
- 150g crushed cornflakes
Method
1. Cream butter, sugar & salt until light and fluffy
2. Mix flour, milk powder, baking powder and baking soda then add it to the butter mixture and mix until just combined
3. Add vanilla
4. Add cornflakes and mix until everything comes together
5. Make into 10g balls and place into liners
(you can use any method to place the cookies)
6. Bake for 40 minutes (depends on your oven)
7. Leave to cool before placing the cookies into an air-tight container
This is just a basic cookies recipe. You can tweak it to suit your preferences by adding dried fruits, nuts, sprinkles etc. The possibilities are endless!
